International bistro-style: a little bit Italian, a little bit French, a pinch of Alsace. These classic bistro dishes, with recipes created by Chef Paul, bring the bistros of the world to you.
First you’ll whip together Chef Paul’s signature panzanella salad, then you’ll work on the main course; crispy chicken thighs served over a medley of vegetables cooked in red wine sauce. You will learn to make spaetzle, a specialty of Alsace and Switzerland, to accompany the main course, using the spaetzle maker to make perfect, authentic, dumplings. A fruity, palate-pleasing sorbet rounds off this delicious meal.

The reviews for the Classic Bistro Dishes class are mixed, with some students feeling that the chef lacked enthusiasm and that there was limited hands-on experience. These students were disappointed that most of the prep work had already been done, leaving them with little to do during the class. Miette means, "little crumb" in French. This name was chosen while giving cooking classes at the restaurant Tartine in the West Village. Since Tartine means "slice of bread" we thought it an appropriate name for the school!

There are 2 entrances located between Umbertos Clam House. One is to the left if facing the restaurant and that is 1 flight up the stairs you will need to press 11 then the green bell key and wait to be buzzed in. The other is to the right of the restaurant that is a black street level elevator and just press the elevator button to gain access and go to the 2nd floor. There is also an intercom system there as well in case the elevator is locked. Closest Train stations are: B,D at Grand Street,N, R, J, Q, 6 at Canal Street. Parking is available on Elizabeth & Mott between Hester and Canal Street.
