What you'll learn in this culinary (meals) class:

This hands-on, skills-based series covers the advanced skills that amateur cooks need to take their culinary education to the next level. We'll focus on each cooking technique, using multiple ingredients to drive it home, so you leave confident that you can tackle these skills on your own.

Culinary Boot Camp: Basic Skills is NOT a prerequisite if you already feel somewhat comfortable in the kitchen.

This program meets every week for 6 weeks.

WEEK 1: Knife Skills + Advanced Vegetable Techniques

Skills covered:

  • Advanced Knife Skills
  • Vegetable Techniques: Braising/Stewing
  • Cooking with Legumes
  • Creating Balanced Plant-Based Meals 
  • Seasoning Techniques: Balancing Salt/Fat/Acid

Recipes include:

  • Moroccan Tagine with Chickpeas and Vegetables
  • Classic Minestrone
  • Sauteed Leafy Greens 

WEEK 2: Poultry Techniques (Chicken + Duck)

Skills covered:

  • Quartering a Whole Chicken
  • Braising Legs/Thighs
  • Poaching and Pan-Roasting Breasts
  • Working with Duck Breast

Recipes include:

  • Crisp Duck Breast with Cherry Jus
  • Vietnamese Shredded Chicken and Cabbage Salad
  • Braised Chicken with Wild Mushrooms

WEEK 3: Meat Techniques (Beef + Pork)

Skills covered:

  • Meat Techniques: Understanding Different Cuts, Searing, Brown Braising
  • Meat Pan Sauces

Recipes include:

  • Steak with Red Wine Pan Sauce
  • Perfect Meatballs in Marinara
  • Pork with Apple-Onion Gravy
  • Seasonal Salad

WEEK 4: Fish + Shellfish Techniques

Skills covered:

  • Working with Shrimp, Mussels, Clams 
  • Filleting Whole Fish
  • Making Fish Stock
  • Simple Fish Stews

Recipes include:

  • Fish Stock
  • Mussels Mariniere
  • Provencal Fish Stew
  • Garlic Shrimp
  • Beet + Escarole Salad

WEEK 5: Fresh Pasta Techniques

Skills covered:

  • Fresh Pasta Dough
  • Building a Ragout
  • Making Fresh Ricotta Cheese
  • Forming Ravioli and Tortellini

Recipes include:

  • Hand-Cut Pappardelle with Braised Pork Ragout
  • Spinach-Ricotta Ravioli with Sage Brown Butter
  • Sicilian Orange + Fennel Salad

WEEK 6: Advanced Baking Techniques

Skills covered:

  • Pate a Choux Dough
  • Creamed Butter Cakes
  • Chocolate Ganache
  • Working with Phyllo Dough
  • Working with Egg Whites

Recipes include:

  • Classic Profiteroles
  • Upside Down Fruit Cake
  • Dark Chocolate-Almond Torte
  • Savory Spinach-Herb Phyllo Pie

School Notes:

You’ll receive a complete recipe packet and enjoy a full sit-down meal at the end of class with your classmates. Our classes are BYOB, and you are welcome to bring a bottle to share at the sit-down meal.

There is no sit-down meal for the following classes:

  • The Baking Basics
  • Holiday Candy Workshop
  • Bubbles and Truffles: Candy Making for Adults

Our classes are hands-on, coupled with demonstration-style teaching. Everyone is situated at their own cutting board/chef’s knife station around a large wooden work table that accommodates the whole class (10 people max). We work together as a group, with the chef at the head of the table.

We focus on knife skills, preparing ingredients for cooking, and we strive to find every opportunity to offer you a hands-on experience at the stove and at your station, all within the spacial parameters of a single stove/family-style kitchen. We ask for volunteers to assist in all cooking.

Refund Policy

For Public Classes:

  • All classes are non-refundable.
  • We have a firm 48-hour cancellation policy (for credit only) to ensure that we have enough time to refill your seat with another student.
  • While it is not in our nature to say no, we are simply not able to accommodate last-minute illnesses or work-related conflicts. However, you are always welcome to send someone in your place, because we understand that these things do happen.
  • If you test positive or have been exposed to Covid, and it is less than 48 hours before your class, we will certainly work with you to find a future class for you to attend.
  • If you need to reschedule with less than 48 hours notice, please reach out directly to Home Cooking New York: [email protected].

For Culinary Bootcamps:

Boot camp registrations are not refundable, but are transferable to another boot camp if you give us more than 1 weeks’ notice if you need to change your start date.

Because of the volume of Boot Camps we offer, we cannot offer make-up classes to everyone who misses a class, as it happens too often. As a consolation we have two options for making up missed classes, provided you alert us ahead of time:

  1. Send a vaxxed friend in your place (and make them cook you a meal based on their new skills, as repayment!), or
  2. Opt for our “Plan B” program: You can register for any single class that covers the same/similar coursework you missed, provided it still has an open seat 48 hours before it runs. That way you can take another class and we are just filling empty seats. Please note, this is a last-minute, drop-in option, not something that can be scheduled more than 2 days in advance. This does require that you keep tabs on our schedule to see what is available (the number of open seats is part of every class listing).

Hello- I am looking to take the Culinary Boot Camp: For Amateur Cooks by Home Cooking New York’s program that starts on Monday, February 17. Is there any way I can take this class if I can’t make the first date? Is there a way for me to make-up the first class? Thank you for your help in advance.

We're afraid the interest in this class is too high to deal with rescheduling each student that has a conflict in one of the 6 weeks. Rescheduling is not possible, but students can always send a friend in their place (in case you are already enrolled) so someone can enjoy the class. A commitment to this class is a commitment to all 6 dates.

Chef Jennifer is an amazing instructor ! She had the group participate and showed everyone technics while explaining in detail the steps needed to cook the meals. Chef also explained that you can substitute ingredients to your own palate or if not available at your local markets as well as advising where you can buy some of the ingredients! I really enjoyed this class and can't wait for part 3 to happen !
